Let me start with the statement that I do not like cranberries. However, this recipe intrigued me enough that I thought I would give it a try and it was delicious! (It is once again from that great blog www.flythroughourwindow.com) Cranberries are also super good for you so it may be a way to sneak some into your kids!
3/4 C. sugar
4 apples, peeled and diced (Gala recommended)
1/2 bag mini marshmallows
1.5 C. chopped pecans
16 ounces vanilla yogurt
The day before you serve it, cut the cranberries. It may seem like a pain but it really doesn't take too long. (I even quartered mine and got it done while the kids were eating breakfast.) You can lightly pulse in a food processor but don't pulverize them! Add the sugar, stir, cover and stick in fridge. The next day, they will be sweet and WAY better than a regular cranberry. When you soak in sugar, it always draws out liquid so before you start the next day, drain out most all of the liquid in the container.
Add all other ingredients and stir well. You can do more or less of any ingredient if you prefer. You can mix it up several hours before you serve. The apples won't turn brown because of the acidity of the cranberries. (Just stir in each apple as you chop it so that they won't turn brown while waiting for you to chop all of them.)
Serves 10-12 as a side dish
