This recipe is for a delicious, buttery treat that is quick and easy to whip up. My friend Melissa Kaiser brought me some a couple of weeks ago with chocolate chips and peanut butter chips in them and I inhaled them. I made some this week with just chocolate chips and they were just as yummy. You can use this as a a basic mix and then doctor it up however you want to.
2 1/4 C. flour
1 tsp. salt
1 tsp. baking soda
2 sticks butter, softened
3/4 C. sugar
3/4 C. light brown sugar
1 tsp. vanilla
2 eggs
1 bag of morsels (whatever kind you want to use)
Mix first 3 ingredients together and set aside. In a mixing bowl, blend the butter, 2 sugars and vanilla. Add the eggs one at a time, mixing well. Add in flour mixture until well blended. Stir in morsels.
Grease a 9 by 13 pan or line with parchment paper. Spread out mixture. Bake at 350 for 15 minutes and then continue to bake, checking every so often until golden brown.
Tips: I baked mine in a convection oven on 325 and it took about 25-30 minutes to cook. It will not be jiggly once it is cooked but you may think it is semi-under cooked. It will firm up as it cools but I think it is good a little gooey! Bake longer if you want it more firm. You can also do this in a jelly roll pan to make more bars that are thinner but I'm partial to a thicker gooey bar.
