So Good Brownies

I have passed along lots of brownie recipes in the past but these are definitely worth trying. They are a great "brownie base" recipe and then add in whatever else you like. We have decided they are the day after you bake them.

4 (1 oz.) unsweetened chocolate baking squares
3/4 C. butter
1.5 C. sugar
1/2 C. packed light brown sugar
3 eggs
1 C. flour
1 tsp. vanilla
1/8 tsp. salt

Preheat oven to 350. Line bottom and sides of an 8-inch pan with aluminum foil, allowing it to extend over the sides of the pan, so you can easily pull the brownies out (or use parchment paper). Microwave chocolate squares and butter until melted and smooth, stopping ever 30 seconds to stir it. Whisk in both sugars. Whisk in eggs, one at a time until blended. Whisk in flour, vanilla, and salt.

Pour into prepared pan and bake for 40-45 minutes or until toothpick inserted in the middle comes out with just a few moist crumbs. Cool completely on wire rack. Lift out using the foil, remove foil, and cut into squares.

Tips: The article in southern living had lots of "add ins" you can mix into the batter. My favorite so far is to add 1/2 bag of toffee chips, 1/2-1 bag of semi sweet morsels and 1 T. of instant coffee. So yummy and rich! When I add all of that, I bake in a 9 by 13 pan or divide it between an 11 by 7 and an 8 by 8. I think they are a little too thick and take too long to cook in an 8 by 8 pan. Takes less time to cook and makes more if you make them thinner.
