Baked 3 Cheese Egg Casserole

This is a yummy egg dish that I made recently when we had breakfast for dinner. I liked that it is similar to scrambled eggs but eliminates you having to be at the stove right before dinner fixing it. (Plus with all those cheeses, it tastes so yummy!) Make it earlier in the day and cook that night. We loved it so much that we are adding it to our breakfast for christmas eve dinner tradition this year.

7 large eggs
1 C. milk
2 tsp. sugar
4 C. shredded Monterey Jack cheese
4 oz. cream cheese, cubed
1 (16 oz.) container small curd cottage cheese
2/3 C. butter, melted
1/2 C. flour
1 tsp. baking powder

Preheat oven to 350. Grease a 3-qt. casserole dish, set aside. Beat together eggs, milk & sugar. Add cheeses & melted butter and mix well. Stir in flour and baking powder. Pour into prepared dish.

Bake for 45-50 min. or until knife inserted comes out clean. Cut into squares and serve. (May be prepared in advanced and kept in fridge. Will take about 60 min. to cook if you place it from fridge into the oven.)

Makes 10-12 servings.

Tips: You can easily cut this in half for a family of 4-5. To do 3.5 eggs, just lightly beat one of the eggs and pour about half in the mixture and add the other 3. Doesn't have to be real exact-- it will turn out no matter what.
