Easy London Broil (Old recipe)

The Lord said to me, ‘See, I have begun to deliver Sihon and his country over to you. Now begin to conquer and possess his land.’” Deuteronomy 2:31

This recipe comes to us from the kitchen of Melinda Peevy. She served this to us at her house recently and Derek loved it so much that he went back for thirds and talked about it for several days after! You can throw it in the slow cooker in under 2 minutes.

1 London Broil
1 packet Ranch dressing mix
1 (16 oz.) jar Pepperocinis, including the juice

Put all of the ingredients in a Crock Pot. Cook on high for 5-6 hours, depending on the size of meat you bought and how well done you like it. Reserve the juice in the pot for additional seasoning and moisture when serving.

Serves 6.

Tips:
A London Broil is a cut of beef for those not familiar with it. Adjust the cooking time according to your Crock Pot. Mine cooks fast so I did 5 hours on low. You can serve it sliced or shred it and serve on rolls for parties and tailgates. We made it recently and it lasted for 3 meals. We ate it sliced the first night and then made sandwiches for two nights. Quick sandwich idea—slice some meat, put in on bread with sautéed onions, a slice of havarti cheese and topped with a Gutherie’s type sauce and toast it…..soooo yummy. Derek mixes up a yummy sauce with a little sour cream, some mayo, ketchup, seasoning salt and garlic powder. Just kind of add some of each and taste it as you make it till you get it tasting good.

Works well with chuck roast too. There is more fat to pull off, but it is super tender.
