Creamy Feta Vinaigrette

For you are my hope; O Lord God, You are my confidence from my youth. By You I have been sustained from my birth. You are He who took me from my mother's womb; My praise is continually of You. Psalm 71: 5-6

This is just a quick vinaigrette that can be used for a variety of things such as salad or roasted veggies. It has a similar taste to food from Zoe's.

3 oz. feta, crumbled (3/4 cup)
2.5 T. red wine vinegar
1 T. water
1/2 Tsp. dried oregano
1/4 C. plus 1 T. extra-virgin olive oil
Salt & Pepper

In a food processor, pulse all ingredients but the salt and pepper until it is smooth. Season with the salt and pepper.
