Fiesta Chicken Casserole (old recipe)

“This man came for a witness, to bear witness of the Light, that all through him might believe. He was not that Light, but was sent to bear witness of that Light.” John 1:7-8

This dish comes to us from the kitchen of Laura Carlson. It was so fresh and delicious! Other than cooking the chicken, it took about 7 minutes to cut the veggies and mix together… you can’t beat that for a fast, healthy and yummy dinner.

3-4 C. cooked chicken, diced
1 can black beans, drained
1 can Ro-tel (original)
1 onion, chopped
1 tomato, chopped
1 C. fiesta blend shredded cheese

Mix all ingredients in an 8 x 8 dish and top with cheese. Bake at 350 for 30 minutes.

Serves 4-6.

Tips:
We ate this like a normal casserole one night. Then we ate it wrapped up in a flour tortilla with a dollop of sour cream, like a burrito. Both ways were great!
